Summer is for firing up the grill, but grilling the same burgers and hot dogs for every backyard barbecue can get old quickly. Take your grilling skills to the next level with a lesson in Japanese Barbecue. Japan knows how to grill, though it is little known in America that grilled meats are as iconically Japanese as sushi and ramen. Some of the very best Japanese recipes are grilled and skewered rather than rolled or simmered. Until the 19th century, most cooking in Japan was done over traditional hearths called irori built right into traditional homes.
This class will be taught by Park City Culinary Institute chef Yu Yamamoto. Yu was part of the team that opened the award winning Naked Fish Japanese Bistro in Salt Lake City. Chef Yu helped Naked Fish win multiple honors including Salt Lake Magazine’s “Best Japanese”, he then went on to open the Yama restaurant in the prestigious Montage Deer Valley hotel.
